Ma'amul - Nut Filled Cookie

Ma'amul is a cookie like, nut filled pastry and it is normally served during celebrations. Our Ma'amul is a semolina shortbread bound with butter,orange blossom water and rose water which gives it a unique sweet flavor. The filling is a mixed of raw walnuts, cinnamon and brown sugar.

Ma'amoul means filled in Arabic. These are very popular in Lebanon but can be found throughout the Middle East and North Africa. They are traditionally shaped as crescents or as pressed cookies and have several variations for the fillings. The Farina gives it a delicate, distinctive flavor.
